1 kg Potatoes - cooked in jacket, peeled, cooled 100g onion - finely diced 50g parsley chopped 75g gherkins - finely chopped 100g bacon chopped finely and cooked crispy - this is optional 4 tbsp. Real mayonnaise Salt & Pepper to taste.
Cut the potatoes into medium size pieces. Cook the bacon until crispy and pour into the potatoes including the cooking fat. Mix with the rest of the ingredients and season to taste. A dash of vinegar could be added to get a tangy potato salad.
