Preparation time:20 mins plus 3 hours refrigeration time cooking time: nil Serves 8

1 packet plain sweet biscuits
2 tsp ground cinnamon
125g unsalted butter, melted and cooled
500g ricotta
1 cup thickened cream
1/2 cup caster suger
2 tsp vanilla extract
Finely grated rind of 1 orange
6 slices glace orange, finely chopped
125g dark chocolate, finely chopped
Extra 4 slices glace orange or 8 glace cumquats

Step1- Line the base and sides of a 22cm springform tin with baking paper.Put the biscuits in a food processor and process until fine crumbs form.Add the cinnamon and butter and process until well combined. Spoon into the prepared tin and press down with the back of a spoon. Refrigerate for 20 minutes.

Step2- Put the rocotta, cream,suger and vanilla extract in a medium mixing bowl and beat with electric beaters until smooth. Add the rind, glace orange and chocolate and mix to combine. Spoon onto the biscuit crust, smooth the top and refrigerate for 2-3 hours. Remove from the tin. Cut the orange slices or cumquats into quaters and place around the edge of the CheeseCake.
