Ingredients:
250 grams solid cashew nuts, soaked in salt water for at least 2 hours
Large semi ripe pineapple
2 large onions, chopped
10 - Dried whole chillies
3 cloves (karabu-nati)
1 spoon soy sauce
2 garlic cloves, chopped
Handful fresh coriander, chopped
Few curry leaves
2 tbsp soft brown sugar
4-5 tsp sunflower oil
2 tsp black curry powder
1-2 tsp chillie powder
Salt and lime to taste
Method:
1. Preheat the large open saucepan with oil and add onion, chopped garlic, curry powder, whole chillie, cloves, curry leaves and fry till golden brown.
2. Add the rinsed cashew nuts to the saucepan and keep cook on low heat for 5-10 minutes.
3. Next add the pineapple cubes and mix well.
4. Add soy sauce, brown sugar, chopped coriander and stir in chillie powder. Cook for a few more minutes. Add more oil if needed and keep it on low heat.
5. Add salt and lime at the end. Mix without damaging the pineapple cubes and remove from stove after about15-20 minutes. (Use your instincts to decide on the time needed on the stove)
