2 tbsp vegetable oil
1 tsp cumin powder
1 3/4 cups tomato sauce
2 cloves of garlic, finely chopped
1 onion, chopped into 1 inch pieces
2 cups rice
1 1/4 cups vegetable broth
1/2 tsp of saffron or turmeric
1 lb of mixed vegetables (green peas, carrots, beans, corn etc.) fresh or frozen
1 cup peeled and deveined medium shrimp
Fry the garlic and the onion in oil, until the onion is tender.
Add the remaining ingredients. Bring to a boil, reduce heat. Cover and cook, stirring occasionally until the rice is fluffy.
